Make Fridays leftovers day!

Chances are something has come up during the week and you weren’t able to cook all your planned meals OR you have a fridge full of leftovers or random ingredients you can get creative with.

My favourite is a leftovers frittata.

Take the veggies you have left and use them up! 

I had: 

  • 1/4 Kent pumpkin

  • 2 cooked & peeled beetroot

  • 1 leek

  • 1 red capsicum 

  • 1 block fetta 

  • 8 eggs

  • 2 sheets short crust pastry - 1/2 thawed 

  • Mixed herbs 

  • 200ml milk

Half bake pumpkin in the oven 

Meanwhile chop all other veggies & dice fetta

Grease a baking dish with EVOO spray & lime with pastry 

Add all veggies & mix 

Whisk together egg and milk together & add mixed herbs to taste.

Pour over veggie mixture 

Bake in the oven for 40mins on 180’c or until egg is cooked through. 

Serve on its own or with a salad/ kale slaw.
